If you get stuck in a deflationary spiral, you can either grind it out and watch your margins steadily dwindle; make a last ditch attempt to inject some new Me - and profit - into the category; or count your losses and find the next big thing, says Archy Cunningham, the straight-talking boss of United Central Bakeries (UCB). And right now, that's gluten-free. Less than two years after dipping its toes into the burgeoning 'free from' market, UCB's new gluten-free factory within a factory at its Bathgate bakery is turning over a cool £1.5M from gluten-free naans, pitta breads, pancakes, scones and pizza bases sold to Tesco and Asda.
