Dry conditions in the Southeast are causing processors in the Southeast to conserve water, whether they want to or not.rnGeorgia is under a severe drought, with parts of the state 30 inches or more below the average rainfall. Lake Sidney Lanier, a reservoir northeast of Atlanta, feeds the city with much of its water. That water source, created by a dam on the Chat-tahoochee River, is at an all-time low and getting lower by the day.rn"It's weather related, but it's also the result of unchecked suburban growth in Atlanta," said Scott Russell, a professor in the Department of Poultry Science at the University of Georgia. "If you look at the population in the city, it's literally doubled in the last 10 years - you just can't sustain that type of growth."rnIn response to the crisis, Georgia Governor Sonny Perdue declared a state of emergency and mandated water conservation measures. The city of Atlanta has shut off all its fountains, homeowners have strict guidelines on everything from watering the grass to washing the car, and businesses are dealing with restrictive measures. The emergency mandate calls for a 10 percent reduction in water use, so processors are looking for ways to reduce their water use and still maintain a good food safety record.
