"People never get their fill of turkey at Thanksgiving," believes Brandt Evans, chef-partner in the casual, four-location Blue Canyon. So he created Maple Roasted Turkey Flat Bread as a vehicle for those iconic flavors, roasting a whole, boneless, skin-on turkey breast with maple syrup and sage. The flat bread dough is then topped with butternut squash puree, three to four ounces of roasted turkey, cranberries, goat cheese and more fresh sage. As a special last fall, Evans was able to upcharge slightly for the turkey version over the other flat breads in his rotating selection. Poultry also shows up in duck confit and chicken sausage flat breads (both $14).
