Salads are very much alive and well within Sodexo's corporate services division accounts. Bill Mitchell, senior director of brand management, is part of the menu development team that's totally smitten with salads and their potential. Salad Rolls: The latest introduction is salads within a roll, a.k.a. Salad Rolls. At accounts such as Hewlett-Packard locations in California, and General Electric's Connecticut offices, there are prepared-to-order Summer Salad Roll stations. There, crisp vegetables and fresh herbs, plus various noodle and protein options, are rolled to order in rice paper. "We'll have some ready to go, plus we'll make them just for you in the combination you'd like," Mitchell explains. "We also do a lot with handheld salads using tortilla wraps or pitas, incorporating different chopped salads such as Greek chopped salad with kalamata olives, chickpeas, banana peppers and feta wrapped in a spinach tortilla. That's totally vegetarian, but for folks looking for a more traditional salad, there's turkey cobb chopped salad ingredients in a tomato tortilla," he says.
