As operators struggle to grow revenue and control costs, pleasing customers has never been so important. Using surveys, focus groups and comment boards, many operators are learning how best to serve their customers and improve their bottom line. At 1,900-employee Erie Insurance in Erie, Pa., where Metz & Associates manages the foodservice, the cafe is making full use of Metz's Feed Us Your Thoughts program to gather customer feedback. Jenny Bucci, general manager for Metz at the account, says they set up a magnetic comment board in the cafe where customers post comments with a guarantee that someone will respond within 24 hours.
