A growing but vocal minority are requesting―nay, demanding―more healthy and/or vegetarian choices on the menu. Meanwhile, many operators report it's often a lot of talk but little action (I.e., sales) when such items are made available. But some are finding that meat substitute recipes, when handled with a creative flair, can entice customers to try it―and when they do, they often like it. Serving many health-conscious customers among the 200 lunchtime cafeteria goers at Manugistics, Inc. In Rockville, MD, Brock & Co.'s foodservice manager Hussain Aziz finds many are "really big on tofu," rather than tempeh or seitan.
