Bill Zemke, Chartwells dining svcs. resident d.m. at Univ. of Arkansas, Fayet-teville, is a Wisconsin native and admittedly "a cheesehead, through and through." But that hasn't stopped him from having a head full of ideas to keep things interesting and profitable on the sprawling campus (serving approx. 16,000 students and 3,000 staff) that he now calls home. Not counting his college stint as a student janitor and dishwasher at the Univ. of Wisconsin Eau Claire―where he also tended bar, carved meats, helped out at banquets, etc.―Zemke has worked in foodservice for more than 31 years, having joined Greyhound Food Management in 1972. A two-year "blip" took him to a family-owned resort working as kitchen manager and head cook, lodged idyllically in a log cabin deep in Wisconsin's Chequamegon National Forest.
