On a recent Friday morning Ian Purkayastha walked into Marc For-gione, a sleek Tribeca restaurant, with a backpack slung over his shoulder. When sous-chef Barry Frish emerged from the kitchen, Purkayastha produced two items from his bag: a balsamic vinegar made with truffles and a truffle-acacia honey. "The honey comes from a small producer in Piedmont [Italy]," he explained, as Frish took a spoonful. "It's really nice in ricotta." Frish sampled the balsamic, too, and agreed to buy two cases, at $90 apiece, and one jar of honey. "Cool, man," said Purkayastha, slapping Frish's hand. "Let me know if you need any more stuff."
