With the abundance of restaurants today, good food simply isn't enough. To be recognized and attract diners, you need a complete and authentic concept incorporating good food, timeless design and innovative ideas. "The design element is so critical-if you combine that with a good price point, people perceive value. That's the tripleheader: design, food and price point. That's a good start for success," says Elizabeth Blau, a food and beverage industry consultant and restaurateur. But because tastes can differ from place to place, "Our approach to creating restaurants is that they should be 'right for their times' and 'right for their markets,'" says Michael Whiteman, another restaurant and hospitality consultant. "But right for their times doesn't mean responding to short-term fads and fashions. Style lasts, but trendiness needs frequent and costly replacement."
