You never know what you don't know until it smacks you in the face. These periodic lessons arrive at various stages of your IFR career, and how you react determines your success. When I made my living flying piston singles and twins, I was primarily a flight instructor with some aerial mapping being a big chunk of the summer work. There was the occasional charter, and some atmospheric sampling work as well. In terms of weather, the airplanes weren't equipped with any kind of radar (show me a Cessna 152 that is), so thunderstorms were avoided altogether. Known icing was also not approved. Most of my actual IMC experience came from flying IFR cross-country flights on rainy days, or in the brutal mid-Atlantic summers with haze so thick you'd think you might choke on it. Getting between layers or flying over the top was not unusual either.
