摘要

This work is devoted to estimate the sucrose crystallization kinetics from batch crystallizer data obtained from a linear cooling profile. A nonlinear optimization method is applied to estimate the growth and nucleation rate parameters from batch cooling crystallization experimental data, related to the liquid phase concentration profile and to the crystal size determined from images obtained by optical microscope and scanning electron microscope (SEM). The calculated results are compared with those obtained in previous works.
