摘要

Malting, brewing and distilling are cereal-based technologies, which employ long traditions tracing back to Babylonian times. Whenever modern technologies take advantage of this knowledge pool, they require a hypothesis-driven, science-based approach for the deliberate development of processes. Secured knowledge results from discussion with the scientific community and research communications of the highest possible standards and accepted upon critical review of a refereeing process. In this context we are proud to present the first peer-reviewed symposium proceedings in this field, which is based on selected papers presented at the Second International Symposium for Young Malting, Brewing and Distilling Scientists and Technologists held at the Technische Universitat Miinchen (TUM), Centre of Life and Food Sciences Weihenstephan, in Freising-Weihenstephan, Germany.
