This report analyses the retail market for bakery products and biscuits in France for the review period 1994-1998. Forecasts are made for each year to the year 2003. The market is quantified in both volume and value terms. For the purposes of the study, the market is divided into two broad sectors: bakery products and biscuits: 1. Bakery products 1.1 Bread: includes traditional bread, together with industrial bread (or packaged bread) such as pain de mie (sliced loaf), British- & American-style bread (ultra-frais bread) and other types of bread such as wholemeal and malted; Cakes and pastries: comprise fresh and ambient cakes, single and multiportion, and pastries, such as morning goods and packaged patisseries. The morning goods segment (viennoisertes) includes brioche in slices, individual brioche, pains au lait, filled specialities, large brioches, pains au chocolat and croissants. Packaged patisseries includes chocolate, cream or jam-filled cakes, and individual cakes.
