Regional produce, local sourcing and customers who want to know where their food comes from are key factors playing an increasingly important role in the way Britain feeds itself. It is a model developed largely by specialist food producers who, several years ago, spotted gaps in the market. More recently they have been copied by the big food retailers as food sales become ever more refined and defined. Peak District Dairy based at Tideswell in the Derbyshire Peak District National Park is one of those medium-sized enterprises that has helped lead the way, specialising as it does in delivering the finest quality dairy products to a broad customer base.
