Organic milk and milk products always seemed to be a good idea. But as many in the industry know to their cost, getting everything right along the whole marketing chain has been no easy matter. However, although they started off as niche products, organics are now represented by clearly identified brands - and their output is rising at a rate that other sectors can only envy. After some initial milk price hiccups, which saw many early converters to organic milk production backing away because of low farm gate milk prices, supply and demand are now in far better balance and there is even a winter production premium on offer in an attempt to persuade milk producers to deliver a more even production profile.
