The market for organic milk has seen phenomenal and consistent growth in the past few years, with an increase of 47% in sales during the 52-week period to mid-August It's little wonder then that retailers are working hard with milk buyers to ensure that this growth can be sustained and met by domestic production. Sainsbury's chief executive Justin King recently commented that UK supermarkets faced a significant challenge this winter in sourcing enough organic milk to meet demand.
