Under my desk there's a blue recycling bin. Among the papers, cans and water bottles, there are cups from a variety of coffee shops. That these go in the recycle bin is testament to the fact that the food service sector, like retail, is feeling the impact of consumer pressure to go green. "People are demanding to know where products come from and how they're disposed of," says Devesh Patel, business development director at Packaging Environmental. A lot of high-street outlets are now pushing their environmental credentials, using renewable and recycled materials in their cups. Pret a Manger has started introducing recycling bins to encourage customers to separate packaging waste from food waste.
