Farmers wanting to produce high quality coffee face a fundamental problem - the bean and the fleshy fruit parts of the berry often don't mature at the same rate. Only at high altitudes is fruit maturation delayed sufficiently to allow for full development of a dense and therefore tasty bean. At lower altitudes, the fruit matures more quickly and the farmer has no option but to pick it when ripe, when the bean itself has not fully matured. The farmer has limited options (maybe increase shade and riskyield loss) but could scientists help.
