Overexploitation of soils and the dust bowls that this has caused are mentioned as well as the Green Revolution that has bypassed much of Africa. In an interesting analysis, Bardgett goes to Dijon in France to personally determine whether the taste of wine is indeed a reflection of the soil in which the grapes are grown. His conclusion reads ‘But tasting the wines of Burgundy convinced me that, in some places at least, the soil does contribute to the terroir’.
