Like so many current flower trends, the popularity of hydrangeas over the past ten years or more can probably be traced to Martha Stewart, who began promoting them in the mid-1990s. At that time most people probably thought of hydrangea mainly as a blowsy blooming bush or a colorful, if somewhat ungainly, houseplant. Today, however, hydrangeas are trendy cut flowers, widely available in colors ranging from pure white to "antique" jewel tones. While garden hydrangeas sometimes bear cone-shaped or flat-top flowers, the hydrangeas now cultivated for the cut-flower market are mostly of the mophead type in the species Hydrangea macrophylla. (They also include a few "lace-cap" varieties, with smaller, fertile flowers in the center of the blooming head.)
