There is an increasing demand for 'strategies to lower the amount of S02 I both for preservative-free wines as well as V organic certified wine production where the limit of S02 is often lower than that of standard wine production. S02 is used in the wine industry to control microorganisms and protect against wine oxidation starting from vineyard application all the way hrough to pre-bottling. However, excess use prior to wine fermentation can lead Ao the production of off aromas as well as cause stress to wine microorganisms f in alcoholic fermentation. The term 'bioprotection' is a relatively new term in the wine industry (Chacon-Rodriguez et al. 2020; Coulon et al. 2019; Csutak et al. 2013), in this case referring to control of microorganisms with the use of specific microorganisms (from the grapes ecosystem). This article aims to discuss the findings of recent proof of concept trial work on the use of Bioprotection on harvest equipment. Specifically, equal parts of Torulaspora delbruekii and Metschnikowia pulcherrima were applied to grape harvesters and rinse water for bin washers. The objective of the trial work is to reducethe load of spoilage microorganisms present on winery equipment and subsequently on grapes by using Bioprotection to occupy the microbial space and prevent the proliferation of undesirable microorganisms.
