Just when the dairy industry thought there was no hope for cottage cheese, surprise, cottage cheese is now an "in food" thanks to flavor and packaging modifications. Since 1995, cottage cheese retail dollar sales have grown 28, according to Information Resources Inc. For Dallas-based Oak Farms Dairy, a subsidiary of Suiza Foods Corp., Dallas, cottage cheese sales were up 17.1 in 2000 from 1999. It's this type of data that motivated Oak Farms to introduce Cheese 'n Stuff, a line of 8-oz single-serve containers of cottage cheese blended with real fruit. Flavors are peach, pineapple and strawberry. Cups sell for 99 cents.
