The food industry hasn't exactly been a pioneer in automating itself--especially when it comes to monitoring pH balance. But it's high time for a change, say industry experts. "If you are a food processor relying on manual pH monitors, those systems will no longer be adequate and you will be forced to automate," says one sensor manufacturer "Regulations pertaining to disinfection are leading to that end." Safety regulations are also fostering the need for automatic pH sensors., says Jim Burkett, product manager for Cole-Parmer Instrument Co., Vernon Hills, Ill. "Sensing pH levels is one of the most important regulatory issues facing the food industry because it directly correlates to safety."
