SUMMARYThe lipids extracted from beef and pork muscle were fractionated into triglycerides, cephalins, and a mixture of lecithins and sphingomyelins. The fatty acid composition of these fractions was determined, and the possible effect of phospolipids on meat flavor was evaluated.
