In this research, most commonly used EMC/ERII equations are compared based on their ability to fit the published sorption data to determine the best fitted equation for selected fruits and vegetables. Non linear regression technique is used to fit data sub-set. In order to compare the performance of the EMC/ERH equations, three statistical error parameters are used. The best-fitted equations provide a sound basis for future work on drying and storage of some fruit and vegetables are given.
