Water is the most important chemical substance on Earth, but there is still much that we do not understand about it. Everyone knows that ice melts when it is heated above 273 K or 0 °C at atmospheric pressure, and that liquid water freezes when it is cooled below this temperature. However, it is less well known that there are at least 13 different crystalline phases of ice.
