The present specification discloses a method for processing Prunus mume fruits and Prunus mume fruits processed by the method. The processing method processes Prunus mume fruits in the state of containing seeds, does not cause appearance of Prunus mume fruits, particularly contraction phenomenon due to osmotic pressure, and alleviates strong sour taste peculiar to Prunus mume fruits. In addition, the processed Prunus mume fruits can retain intrinsic taste and flavor of Prunus mume fruits containing seeds, and can be eaten while being stored at room temperature for a long time without being refrigerated.
