The present invention relates to a hazard analysis and critical control point (HACCP) platform system and, more specifically, to a cloud-based smart HACCP platform system which automates/digitizes the entire HACCP process for HACCP authentication food manufacturers by the IoT technology to construct a production system where the entire value chain is linked in real time like a single factory. The cloud-based smart HACCP platform system comprises: a critical control point (CCP) measurement means to transmit CCP detection data measured for CCP items in at least one process among food storage, manufacturing, and transporting processes; an inspector terminal to generate inspection information for at least one among raw subsidiary material, hygiene, process, and finished product of a food manufacturing site; manufacturer servers to receive the CCP detection data and the inspection information from the CCP measurement means and the inspector terminal to generate electronic documents; a cloud server to receive the CCP detection data and the inspection information from the manufacturer servers, and support at least one among a manufacturing execution system (MES) and supply chain management (SCM) for each manufacturer server; and an HACCP management server to receive the CCP detection data and the inspection information for each manufacturer server from the cloud server, and monitor a food manufacturing site in real time.
