The present utility model provides a standardized method for producing a biscuit enriched with high value Vitamin A from a combination of sweet potato, carrots and malunggay. The method comprises the steps of: (a) preparing the raw materials, wherein (i) sweet potatoes are soaked in a 5 pcnt sodium bicarbonate solution for 10 minutes, rinsed while brushing manually to remove dirt from the peel, sliced into 1 inch thickness, steamed for 10 minutes and then mashed including the peel using a food processor, (ii) carrots are rinsed, peeled, grated and minced for 3 minutes, and (iii) processed dehydrated malunggay flakes are dried by conventional method; (b) mixing separately the dry ingredients like flour, sugar, margarine, salt and baking powder, with the wet ingredients and then conglomerated using a pastry blender; (c) kneading and rolling-out to flatten thinly the mixture of all the ingredients which has formed a hard dough, then leaving the kneaded dough to rest for 5 minutes before folding thrice; (d) a final rolling of the thrice-folded kneaded dough using a pasta maker set to a thickness setting of about 1.5mm-2mm, then molding or cutting the rolled dough into desired shapes with a knife or shape cutter; (e) baking the molded or shaped dough in a preheated convection oven until crispy, that is, for 130øC for 11 minutes. Alternatively, baking is done in a microwave by placing 10 pieces of prepared molded dough on the lined rotating glass of a 700-watt microwave oven and baking under the medium high setting (80 pcnt power) for 1 minute.
