The invention relates to a process and a plant for preparing colloidal magnesium used in a food supplement. According to the invention, the plant comprises a reverse osmosis station and a series of filters for performing high purification of a quantity of water by repeated recycling and filtration until reaching a conductivity of approximately 1 μ S/cm, a glass bath (1) wherein the purified water is introduced, at the upper side the bath (1) comprising two electrically non-conductive rods, placed longitudinally in the direction of the bath, wherefrom some pure magnesium plates (2), with the role of electrodes, are suspended by means of some L-shaped profiles (12), said plates being spaced apart and being in electric contact by means of some contact rails (11), an auto-transformer (4) for applying a constant alternating voltage to the plates (2) of pure magnesium, the starting voltage being 270 VAC on the plates in the glass bath (1), and, after a period of 30...50 min, when the current reaches a value about 12...13 A, the auto-transformer (4) gradually decreasing the output voltage so that the current is maintained at a value about 7...8 A, at a voltage of 50...60 V and a water temperature of 38...42°C, so that the colloidal magnesium concentration obtained after a process time ranging between 6 and 8 days is of approximately 250 ppm.
