The invention relates to a process for preparing chitosan-based bio-nanostructures wherein silver nanoparticles and selective vegetal extracts are encapsulated, with applications in the pharmaceutical and dermato-cosmetic field. According to the invention, the process consists in combining a solution of chitosan : silver nanoparticles : vegetal extracts obtained from the rhizomes of the Cyperus rotundus L species, in an association ratio of 3 : 1 : 2 (v/v/v), homogenizing them by ultra-mixing for 2...5 min at a rate of 600...1000 rpm, adjusting the pH to 4.5...5.2, adding a solution of ionic cross-linking agents, such as sodium tripolyphosphate, followed by ionic gelation under magnetic stirring at 300 rpm, and followed by centrifugation at a rate of 8000 rpm, at the temperature of -10°C, for 15...20 min, to result in bio-nanostructures with sizes ranging between 193...198 nm, a nano-dispersion index of 0.315...0.433 and a ζ potential of 23...26 mV, with an encapsulation efficiency of 68...89%.
