The present invention relates to a process for making an instant quinoa soup (Chenopodium Quinoa) through a parboiling process that results in a natural soup of high nutritional value for its quickly consumption. It characterizes by using as a raw material the whole grain of the Quinoa, thus preserving nutritional properties, avoiding preservatives, rich in protein, fiber, with a low sodium content, and easy to prepare.
