The present invention relates to a method for removing a mercury-retaining species from a hydrocarbon-containing fluid. I) adding a dithiocarbamate polymer to said fluid in an amount such that the number of mercury binding sites on said polymer exceeds the amount of mercury atoms by at least 10%; and ii) Removing the mercury-retaining dithiocarbamate polymer with a water / oil separation device. The present invention depends on an unexpected reversal in the solubility of the dithiocarbamate polymer at very high concentrations. Because of the high solubility, the polymer remains within the aqueous fluid of the hydrocarbon fluid and can be removed without the need for an unwieldy precipitation method and a complicated solid-liquid separation device. As a result, the present invention makes it easy to remove mercury from crude oil contaminated with mercury by using equipment that already exists in typical oil purification.
