Disclosed are a composition of processed ginseng, which is produced by undergoing high-temperature aging under specific conditions by using a whole plant body of ginseng and has significantly increased content of quercetin, chlorogenic acid, and ginsenoside compound K with excellent physiological activities, and a production method thereof. According to the present invention, the content of ginsenoside compound K, chlorgenic acid, and quercetin is remarkably increased in processed ginseng. Moreover, the processed ginseng has an excellent alpha-glucosidase inhibitory activity and pancreatic lipase inhibitory activity, and thus can be used as a material for functional foods and pharmaceuticals due to enhanced antioxidant activities, antidiabetic activities and anti-obesity activities.;COPYRIGHT KIPO 2019
