The present process discloses the procedure of making noodles made from arrow root. The arrow roots is peeled by a peeler; washed thoroughly with running water and pounded using a wooden mortar and pestle. The pounded arrow root is then soaked into water, stirred to encourage the formation of wet starch, and set aside. When the wet starch settled, drain excess water. Transfer the wet starch to the drying pan to produce arrow root powder. When enough powder is achieved, begin forming a volcano-shaped powder on a flat pan sprinkled with salt to taste. Then, put eggs and water in the middle, cover with powder for mixing and kneading to form dough. While kneading, add the fern leaves. Wrap the dough in a plastic paper. Leave for 30 minutes. Remove the plastic paper from the dough, roll with a rolling pin to flatten and cut into strips to produce noodles.
