The present disclosure is related to a method for elaborating a cookie for human consumption with endemic Mexican plants, such as prickly pear, amaranth, chia seed, oatmeal and Spirulina seaweed, which confer the functional properties of each of them, a high protein content and low concentrations of carbohydrates and fats.
