The following summary for the invention relates to the description of a process for producing a phytase from the use of the bacterium of the genus klebsiella spp lineage bp1.15.1.1, where the growth is done in a submerged process using as a culture medium a compound containing one or more sources of nitrogen, carbon minerals and nutritional supplements, the process being performed at mesophilic temperature and supplying oxygen above the minimum inhibitory concentration throughout the process.
