A process for the production of arginine employing corynebacterium glutamicum atcc 21831 or corynebacterium glutamicum atcc 21493 in a fermentation medium comprising cassava bagasse or jackfruit seed as a carbon source. Processes for the production of arginine through fermentation are disclosed wherein sugars obtained by enzymatic hydrolysis of starch from low-cost starch containing agro-residues such as cassava bagasse and jackfruit seed powder are fermented in the presence of microorganisms to produce a fermented liquid substance containing arginine, and recovery of arginine from the liquid substance. The process can be economically expanded to produce arginine from unrefined sugar sources such as higher yielding arginine as compared to more expensive sources of synthetic carbon such as dextrose or sucrose.
