To provide a method for controlling an optimum freshness of fruits and vegetables harvested, and a performing system for the same.SOLUTION: In a method for controlling an optimum freshness of fruits and vegetables, temperature and humidity are statically controlled, and a gas composition is dynamically controlled on the assumption of a specific content such as the kind and a size of stored fruits and vegetables, storage temperature and humidity, and input of a desired shipping timing. That is, an internal environment of a storage 9 is measured by an environment measurement sensor 5 to control it by jetting cold water and activated gas (ozone gas, ethylene gas) by means of a cold water jetting device 11. An amount of the activated gas generated is inferred according to the desired shipping timing based on a storage knowledge base obtained by rule and knowledge of optimum storage conditions according to a storage actual result in the past, and environment measurement information on a gas metabolic rate.SELECTED DRAWING: Figure 1
