The present invention relates to a kefir preparation method and a composition for preventing or treating food poisoning which comprises kefir prepared by the above method as an active ingredient. The kefir according to the present invention can be used as food poisoning bacteria such as Escherichiacoli , Staphylococcusaureus), salmonella Entebbe utility disk (SalmonellaEnteritidis , Pseudomonasaeruginosa , Cronobactersakazakii , and Bacilluscereus , and is also effective as a natural fermented milk for the prevention and treatment of food poisoning bacteria.
