The present invention relates to a method for manufacturing nutritional glutinous rice cake with sweet persimmon powder and nutritional glutinous rice cake manufactured by using the same. The present invention is characterized in that the method comprises: preparing a sweet persimmon; manufacturing slices of sweet persimmon by cutting the sweet persimmon into thin pieces; drying slices of sweet persimmon by primarily and secondarily drying the slices of sweet persimmon; manufacturing sweet persimmon powder by grinding the dried slices of sweet persimmon in 10-18 mesh; drying the sweet persimmon powder by primarily and secondarily drying the sweet persimmon powder; manufacturing the sweet persimmon powder by grinding the dried sweet persimmon powder in 120-150 mesh; preparing a sweet-pickled pumpkin by keeping dried slices of young pumpkin soaked in warm water for 15-20 minutes, taking out the soaked slices of young pumpkin and mixing with brown sugar; preparing dried slices of sweet persimmon; preparing glutinous rice flour; preparing mixture by mixing up, based on 1 parts by weight of glutinous rice flour, 0.02-0.05 parts by weight of water, 0.05-0.1 parts by weight of sugar, 0.2-0.4 parts by weight of sweet persimmon powder, 0.1-0.2 parts by weight of dried slices of young pumpkin, 0.1-0.2 parts by weight of dried slices of sweet persimmon, 0.1-0.2 parts by weight of boiled black beans; 0.1-0.2 parts by weight of boiled adzuki beans; and steaming the prepared mixture to complete a nutritional glutinous rice cake. According to the present invention, it is possible to manufacture nutritional glutinous rice cake containing sweet persimmon powder with a good taste and without a flavor spoiled by containing a sweet persimmon ingredient so as to improve its nutrients in comparison with other common nutritional glutinous rice cake products and prevent the sweet persimmon ingredient from being spoiled.;COPYRIGHT KIPO 2017
