The present invention relates to a kimchi seasoning composition containing Capsicum annuum L. for the improvement of skin condition and antioxidative activity, and to a manufacturing method of functional kimchi using thereof. More specifically, an extract includes three or more extracts of ingredients selected from the group consisting of Codium fragile (Suringar) Hariot, loquat, ramie leaves, pumpkin leaves, citron, Liriope platyphylla, Polygonatum odoratum, fatsia shoots, and eucommia bark. A kimchi seasoning includes chive, Chinese radish, onion, carrot, pear, garlic, ginger, salted anchovy sauce, salted shrimp sauce, and red pepper powder. Kimchi stock includes stock from the head of dried Pollack, kelp stock, Japanese apricot syrup, and salt. The kimchi seasoning composition also includes functional sugar, glutinous rice paste, and Capsicum annuum L. Kimchi manufactured by the method of the present invention provides a skin condition improvement effect and antioxidative activity, and has excellent functionality and a control effect on acidification.;COPYRIGHT KIPO 2017
