Method for obtaining starch (11a) from plants, particularly potato tubers or root or cassava roots or legumes characterized by the following steps: A) opening, especially by mincing, plants, containing starch and starch release. B) Separation plant crushed into a first fraction (1) rich in starch and a fraction (2) of relatively poor fiber starch relative to that C) Treatment with high pressure fraction (2) poor fibers starch for opening high pressure releasing additional starch. D) Separation of the fraction poor in fibers treated starch with high pressure in a second fraction rich in starch fibers and a second fraction of fibers poor in starch.
