Ferritin alone can be given to humans or animals that need iron and can be used to treat or supplement iron deficiency. Ferritin alone can be used in industrial applications such as increasing iron content in heat processed food or beverages. The methods of the invention also include quantification of plant or animal ferritin-derived iron. 1/1
