PROBLEM TO BE SOLVED: To provide novel flavonoid glycosides, production methods thereof, and physiological applied products of novel flavonoid glycosides.;SOLUTION: The present invention provides an α mono-glucosyl rhoifolin, and the following production method, as well as an anti-saccharification agent, lipase inhibitor, and the like containing α mono-glucosyl rhoifolin as an active ingredient. Step (1): A first reaction step (sugar transfer) of allowing a first enzyme to act on the sugar chain of an α-1,4-glucan in conditions in which the α-1,4-glucan, rhoifolin, and an aqueous solvent are present, cutting out glucose from the sugar chain of the α-1,4-glucan, and transferring the glucose to at least position 3" of the first sugar of the rhoifolin; Step (2): A second reaction step (sugar chain arrangement) of allowing a second enzyme having α-1,4-glucosidase activity to act on an α glucosyl rhoifolin group, which is obtained by the first reaction step, having one or more α glucosyl groups, and increasing the concentration (purity) of α mono-glucosyl rhoifolin by removing all α-1,4-glucosyl groups of the α glucosyl rhoifolin.;SELECTED DRAWING: None;COPYRIGHT: (C)2017,JPO&INPIT
