The present invention relates to a method for manufacturing a frozen roasted sweet potato having a red clay mixture applied thereon and a frozen roasted sweet potato manufactured thereby. According to the present invention, a mixture including red clay is applied on the surface of sweet potato, so heat is deeply penetrated into the sweet potato in a roasting process, and thereby a roasting time is reduced. Moreover, sugar content in the sweet potato increases as roasting continues, and the roasted sweet potato can be stored for a long time when frozen. According to the present invention, the method comprises: an aging step (S10) of harvesting and aging raw sweet potatoes; a washing-drying step (S20) of washing and drying the aged raw sweet potatoes; a red clay mixture applying step (S30) of applying a red clay mixture on the washed-dried raw sweet potatoes; a drying step (S40) of drying the raw sweet potatoes having the red clay mixture applied thereon; a roasting step (S50) of roasting the dried sweet potatoes to manufacture roasted sweet potatoes; and a freezing step (S60) of freezing the roasted sweet potatoes.;COPYRIGHT KIPO 2016
