The present invention relates to a composition including a steamed and fermented Gastrodia elata Blume extract having increased anti-inflammatory or antioxidant activity, and to a manufacturing method thereof, and more specifically, to a composition including a steamed and fermented Gastrodia elata Blume extract having increased anti-inflammatory or antioxidant activity by inoculating microorganisms into a steamed Gastrodia elata Blume extract and fermenting the Gastrodia elata Blume inoculated with microorganisms to increase the anti-inflammatory or antioxidant activity through a change of indicator material. According to the present invention, in the case of an extract obtained by fermenting steamed Gastrodia elata Blume, a remarkable increase of gastrodin an indicator material was confirmed, and a remarkable increase of a gastrodigenin component unable to obtain in an existing report was also confirmed, and enhancement of anti-inflammatory or antioxidant activity were confirmed. Thus, the Gastrodia elata Blume extract according to the present invention is expected to be widely used as a functional substance for the anti-inflammatory or antioxidant activity. The method comprises the following steps: steaming and cutting Gastrodia elata Blume; drying the cut Gastrodia elata Blume; fermenting the dried Gastrodia elata Blume in an inoculated culture; and acquiring an extract from the fermented Gastrodia elata Blume.;COPYRIGHT KIPO 2016
