PROBLEM TO BE SOLVED: To provide a method for producing packed root crops and a method for preventing discoloration of packed root crops, capable of preventing discoloration of root crops stored in a container together with a seasoning liquid, to a red color during preservation.SOLUTION: A method for producing packed root crops includes storing root crops and a seasoning liquid in a container. In more details, the method for producing packed root crops includes: a step of bringing root crops into contact with an amino acid solution which contains at least one kind of amino acid selected from the group consisting of the prescribed first group amino acids, and does not substantially contain the prescribed second group amino acids; and a step of storing the root crops in a container together with a seasoning liquid which contains at least one kind of amino acid selected from the group consisting of the prescribed second group amino acids.
