The present invention relates to: a method for producing a composition of amniotic fluid of a sturgeon; a composition of amniotic fluid of a sturgeon obtained therefrom; and a cosmetic composition including the same. The method includes: (1) a sterilization step of sterilizing amniotic fluid of a sturgeon; and (2) a fermentation step of fermenting the amniotic fluid, sterilized in the sterilization step, after inoculating the 100 parts by weight of the sterilized amniotic fluid with 0.1-5 parts by weight of active dry yeast. In addition the present invention provides a fermentation composition of amniotic fluid of a sturgeon and a cosmetic composition including the same.
