The present invention relates to a method for drying fresh jujube. Harvested jujube is cleaned with fresh water; the jujube is firstly dried the jujube at 58-62C for 8-13 hours with hot air; the jujube firstly dried is secondly dried 52-58C for 12-18 hours with hot air to dehydrate the jujube to have 5-10% moisture; and the jujube secondly dried is naturally dried by sun light under the cool and windy weather for 2-3 days. According to the present invention, flesh of the jujube dried by the method of the present invention has increased brix; nutrients of the jujube are prevented from be destroyed by maintaining moisture; and wrinkles and the color of the jujube are good. Therefore, the quality of the jujube can be increased.
